How do you get extra virgin olive oil? I know what a virgin olive is. It's the one's with out the red stuff in it. And I know what a virgin is. How can a virgin get extra virgin??

I think it's a term to mean "Extra pure"... not diluted with other oils. Like motor oil.

you are supposed to take it to the virgin level not the motor oil level Jing........

I'm pretty sure that the first time they are pressed you get the 'extra virgin' but I don't think we should be pressing virgins at all!
We gave up rendering whales for their blubber didn't we?

extra virgin is the half of the first pressing,virgin olive oil is the entire first press,and olive oil is all the stuff that they get out from subsequent pressings.
Different companies have different ways ,but it's usually close.
