chicken thighs, skins off
onion
garlic
feta cheese
canned tomatoes, crushed
chicken stock
black olives (optional)
pepper to taste
brown chicken, sweat onion with garlic
add in tomatoes and stock to cover chicken (olives at this point if using)
add in half of feta crumbled
bring to high heat then simmer covered until chicken done
take off heat and crumble remaining feta into mix
add pepper
serve over couscous
you get to adjust all the ammounts according to need and how much you bought
oh ya, and use olive oil for browning and sweating of course...
