Tuna Curry Chowder (about 6 servings)

1 1/2 cups Potatoes (diced)
1 8 oz. can of peas
1 12 oz. can of corn
1 tbsp. minced onion
1/2 tsp. curry powder
1 or 2 cans 7 oz. tuna fish
2 10 oz. cans Cream of Celery Soup
1 1/2 cup canned evaporated milk
1/8 tsp. white pepper

Cube potatoes. Cook in large saucepan (without salt) in just enough water to cover cubed potatoes. When fairly soft, drain off the all the water, but measure one cup of the water to add back into the pan with the potatoes. After the water, add to this saucepan the celery soup, peas, corn, evaporated milk, minced onion and white pepper. Bring to a boiling point. Cover, then cook over low heat for 5 minutes. In a separate small cup or container, blend 2 tbsp. of the soup mixture with the curry powder. Then, pour the curry / soup mixture into the saucepan. Add the tuna. Heat a little longer so all is warm, then serve.
