Ok first thing is you have to have a decent meat selection because regular pork chops are usually too thin.. you need at least 1inch chops to make this work well.
So you will need the following:
4 1in. pork chops
flour 2 cups( in a flat container with side for breading)
bread crumbs 2 cups( also in flat container)
eggs usually 3-4 is enough
cooking oil ( enough to coat the bottom of the frying pan you will use)
1 Box of Stove Top stuffing mix.. pork flavor is the best for this
Ok on with the recipe now.. First you will need to butterfly the pork chops. You can do this fairly easily if they are thick chops. Make sure to leave about 1/4 from the seam so they stay together and don't rip apart. Rinse them off and set aside. Turn oven on bake at 375 degrees.
Prepare stuffing per directions on the package and set it aside to cool a bit.( speaking from experience it's hot stuff!)
Take a non-stick frying pan or cast iron which ever you have handy, and add oil enough to coat bottom plus about 1/4 inch. Heat on med heat.
Put your flour in the container you want to use, at this time I usually add salt, pepper, garlic powder etc to my flour jus for some more flavor.. You can use which ever spices you prefer.
Repeat that with the bread crumbs.. you are not going to over flavor the chops. In fact, I even use the italian season bread crumbs for this and it turns out great.
In a 3rd container , whip up eggs for basting. Take your rinsed pork chop and fill with about 2-3 Tbsps of Stuffing, roll it in the flour to coat evenly, dip in egg mixture so that's it is coated evenly, then coat evenly in bread crumbs. repeat this process till they are all coated and ready for pan fry. Carefully set pork chops in hot oil and fry on both sides until they are golden brown. Place browned chops on baking sheet and bake in oven for 35 minutes. Serve with favorite vegetable :) ENJOY!!
