Our favorite thing to grill in the summer. I grill these for parties and people go nuts and ask me how I cook them so... figure I would share here.
Requires:
Beef Short ribs
Mae Ploy Sweet Chili Sauce 32oz (http://www.amazon.com/gp/product/B00016UX0K/103-5775371-9455058?v=glance&n=3370831)
Soy Sauce
Lemon Juice
I don't measure anything so ... with that said ... on with the show!
We usually get at least two packets of short ribs (a few pounds) and place them into a large pan side by side. I use our turkey roasting pan for this because it's nice and big.
Dump the entire bottle of the Mae Ploy sauce over the ribs. It's thick and easy to coat the ribs.
Pour soy sauce on the ribs. This is the tough part because you don't want to use too much. I would guess that I am using around a 1/2 cup on a large batch. I use enough Soy sauce to this out the Mae Ploy. :)
Next up is the lemon juice. I use 1/4 to 1/2 cup (again depends on the number of ribs).
Shake the pan around, make sure everything is coated. Cover and put them in the fridge for 24 hours.
Fire up your grill the next day and get ready to rock. Short ribs are thin, so it only takes a few minutes to cook on each side. Take 'em out of the pan and place them on the grill side by side.
I usually grill corn on the cob with butter, lime and chili powder along with this . I can explain how that's done if anyone is interested.
