This one is super easy and oh so gooooooood.

COFFEE CAKE

BATTER:
2 cups Bisquick
2/3 cup milk
2 tablespoons granulated sugar
1 egg

WHAT I PUT IN IT: a large, drained can of peaches.
My dad sometimes uses apples instead of peaches.

STREUSEL TOPPING:
1/3 cup Bisquick
1/3 cup brown sugar
1/2 teaspoon cinnamon
2 tablespoons butter or margarine

Preheat oven to 375

Use 9" round or square pan of similar size. GREASE pan.

Mix streusel topping ingredients until crumbly. set aside.

Stir together batter ingredients until well blended.
If you want to add fruit, put fruit into batter and then mix. I like to dice the peaches somewhat.

Pour batter into pan, spread it out.

Sprinkle/cover with streusel topping.

Bake 20-25 minutes or until golden brown. At 20 minutes, I put a knife into center, pull out and check for batter on the knife. Shouldn't find any! If some there, put back in to bake for a couple more minutes.

When you take the cake out of oven, just leave on counter to cool a bit before serving.
Serves about 10 people (yeah, right).


(* I actually make a 9 x 12 pan of this by increasing the recipe by .5 the ingredients. so I use 3 cups of Bisquick, 1 cup of milk, 3 tablespoons of sugar, and then I have fun using 1.5 eggs!)

wow that does sound really good. I even have bisquick at home right now. You think it would be ok to use fresh apples rather then canned to put in the recipe?

I think I might make this, this weekend.

I bet it would be okay, but don't know how the fruit would turn out.... I'll check with my dad and see if he's used fresh.

I've used fresh apples in muffins. They remain a bit crunchy (just a little), so they will work.

If you want to similate the canned apple thing though, you could always sautee them first in a little butter, add a little brown sugar, cinnamon, and a squeeze of lemon juice to brighten it up. They'll soften nicely, and you'll have a tasty tasty cake!

Sayj, you're right, bisquick does make tasty coffee cakes! Good muffins, too. I also make a mean mock scone from bisquick. All the taste, a quarter of the effort of scones from scratch.

Dad says he uses both fresh apples and some raisins, but he actually sorta makes a pastry, cobbler thing and doesn't measure much. In other words, he tweaks the cake recipe to make something else. But he DOES use fresh apples and some raisins....

Go for it!
