View Full Version : Apricot Nectar Cake
This is a very DIFFERENT cake.... Very rare to find this one anywhere.
Ingredients:
1 Lemon Flavor Cake Mix
1/3 cup sugar
1 cup Apricot Nectar
1/2 cup oil
4 eggs -- beaten one at a time
First, in a large bowl, mix all the ingredients EXCEPT THE EGGS at medium speed for 2 minutes.
Next, add four eggs, 1 egg at a time, mixnig after each egg added.
Pour batter into greased, floured 10-inch tube pan.
Bake at 350 degrees for one hour (Or until cake springs back when touched) Cool on rack right side up for 15 minutes, then remove from pan.
Sprinkle cake with powdered sugar.

Oooh! First, I have a serious weakness for lemon desserts. I'll take them over chocolate, every time.
I snagged a similar recipe called a "Lemon Sunshine Cake" a few months back, but I haven't tried it yet. I'm now really convinced that I need to!
For the Lemon Sunshine Cake:
You will need:
-1 package lemon cake mix (18.25 oz)
-1 package instant lemon pudding (3.4 oz)
-1 cup apricot nectar
-4 eggs
-1/2 cup vegetable oil
-1 cup powdered sugar
-zest and juice from one lemon
Beat the cake mix, pudding, nectar, eggs, and oil until well blended. Pour into a greased bundt pan and bake at 350 for 50-60 minutes. Let cool in the pan and then unmold onto the serving plate. To make the glaze, combine the powdered sugar, lemon juice, and lemon zest in a small bowl. Pour the glaze over the cake. There's a good chance that there will be leftover glaze around the bottom of the cake. You can wipe that off, but I've found that if you leave it for an hour then the cake will suck up the extra.
This cake is so lemony and moist because of the nectar and pudding. The glaze has just the right amount of tartness to balance the sweetness of the cake. Baking it in a bundt cake pan makes a beautiful presentation suitable for a dinner party.
yep that sounds about as similar as you can get. The recipe I have was my mother's when I was a kid. I hardly ever make it, but when I do, it is over the top loved by everyone.

Funny thing is, no I really don't like lemon things.
Lemonade, yes.
Lemon desserts, no.
And I once bought a box lemon bars mix. I made the bars for a bake sale. This guy who bought the bars I made raved about them, and he asked my friend for my email so I could send him the RECIPE!!!! :o) I was happy to tell him what brand lemon bars mix to buy. LOL!!!

The title of this recipe was "Sexy Lemon Bars."
Her secret ingredients were coconut and cardamom.
Hmm that is soooo weird. You posted this apricot nectar cake and what does my sister make this weekend? Apricot Nectar cake! She put apricots over the top of it though...it was really good!
