I present my favorite marinade. ;)

Now, where I come from (hee hee hee), every recipe also comes with a good story, or at least how or where you got the recipe. This recipe was passed to me by my father, who got it from a steak house in the tiny town of Richford, VT, where his father was born and raised.

This marinade is excellent on steak, heavenly on chicken, and quite tasty on pork as well. I'll let you experiment on fish if you're into that stuff...

Equal parts:

Soy Sauce
Your favorite vinaigrette (nummy with Balsamic)
GRADE A MAPLE SYRUP****

Mix and marry the ingredients, and pour over the meat of your choice, and refrigerate. Grill when ready to eat!

*** Pure Maple Syrup, no pancake syrup like Mrs. Butterworth's mmmkay?

Wow that's so simple that even I can't mess up! Gonna have to give it a try.

You'll loooove it. I'd have called it something other than "Ivy's Marinade" but "the marinade Ivy got from her father who got it from a steakhouse in Richford, VT where his father was raised" doesn't quite have a suitable ring to it. ;)

And it is REALLY good. :)

How long do you usually marinade steak?

Depends on the cut... more tender cuts probably 2-4 hours, something like flank steak or london broil, 24 hours or at least overnight.

One thing to keep in mind is that the meat is being tenderized, but in a way, it's also being chemically changed in a way *similar* to being cooked. (Think of Steak Tartar).

So you want to marinade it long enough to permeate the meat and tenderize, but not so long that it is pre-cooked.

That said, i like longer marinades, but medium rare steak. ;)
