Spanish Pulled Pork / Pork Chili Rojo / Whatever you want to call it
Ingredients:
3-4 lb boneless pork shoulder (Boston Butt)
1/2 Tablespoon Chili Powder
1 cup chopped onions (mine are Texas 1015 Sweet onions)
2 - 16 oz bottles salsa
10 oz can Rotel
1 cup liquid (either water or juice left in the cooking bag from the pork)
Tortillas
Needed Equipment:
Large size oven roasting bag
Crockpot / Slow Cooker
Directions:
Place pork in oven bag inside the crockpot. Top with chili powder and add chopped onions all around the pork. Close oven bag loosely with the nylon tie. Cut a few small slits in top of bag. Pour 1 inch of water all around the outside of the bag. Place lid on crockpot and cook the pork on low for 6-8 hours.
Remove pork and onions from bag, reserving 1 cup of the liquid from inside the bag (if desired). Place in a large pot. Pull the meat apart with a fork. Add salsa, Rotel and liquid. Stir to mix. Simmer, covered, on low for 1 hour, stirring occassionally.
Makes 6+ servings
Serve with warmed flour tortillas, salsa, sour cream, cheese, and whatever else you like. This meat can also be used for other things, like tamales or enchiladas. :)
