After all it is that time of year-enjoy!!

CREAM OF FIDDLEHEAD SOUP
3+ Cups of Fiddleheads
2 Cans-Cream of Broccoli Soup
1/2 Cup Carrots-Finely Diced
1/4 Cup each of the following Finely Sliced***
Shallots
Leeks
Scallions
Valdali Onions
Celery
1 Pint Half&Half or Heavy Cream
2 Cloves Garlic Chopped Very Fine
OR 2 Teaspoons Minced Garlic(In a Jar)
Salt and Pepper


Steam Fiddleheads Approx.10min.-until tender
Immediately run under cold water when cooked*
Microwave Carrots,Celery,and Garlic in a Bowl
with just enough water to cover
When Carrots,Celery,and Garlic are Approx.
Half Cooked(2min.?)Add Shallots,Leeks,and Onions*

In a pot start warming the soup and half&half.
Add everything** but the Fiddleheads
(Don't want to break the Fiddleheads up to much)
Stir to mix up well at Medium Heat
Add Fiddleheads and Stir SLOWLY
Let Simmer on Low for at least 1/2hour


NOTES:
*Steam,Boil,Microwave,or Saute
**Including Water
Add 1/2 Cup of Tomatos-Diced-no seeds(Color+Flavor)
Cut 3/4 of the Fiddleheads in Half after Cooking
Add some Mushrooms
***Shallots,Leeks,and Scallions are all
in the Onion Family-They can be left out
and it will Taste Good
Add Parsely or some other Herbs

I made this up on my own after reading many recipes--good texture and great flavor--try it.

I've never had fiddleheads (or seen them available), but I've heard great things about them on some cooking sites I frequent. Thanks for sharing!

All about the Fiddleheads. :)

Basically, they are a wild edible plant. If you harvest the baby fiddlehead ferns, they make tasty eating. If you let them grow, they are huge in a few months. They are a mark of spring (along with asparagus, and apparently ramps in the south). Apparently they are most available in the north (which is why, as a 2/3 southern californian, 1/3 Texan gal, I've never found them).
