3 cloves garlic
1 cup oil
4 tbs vinegar
3/4 tsp basil
3/4 tsp oregano
1/4 jar capers (The little 3oz jar)
2 tsp sugar
1.5 tsp garlic powder
2 tbs accent
1/2 tsp seasoned salt
1 tsp dry mustard

Put in blender and ummm blend. :)

I noticed Inez dropped by with a yummy sounding dip recipe. :) Some of the things I've posted are my favorite recipes, others are things I've found some where on the net and want to try it and not lose it. I've yet to dig through my folders of recipes saved as txt files over the years.

Is it lunch time yet?

the best homemade dressing to go with..say... a shrimp salad is mayonnaise, ketchup, garlic and a dab of worcestshire sauce.

Q: What are capers and where do they come from?
-Connie S., Bryan, Ohio. A: The caper is the bud of a bramble-like shrub. It grows wild in the Mediterranean region and in some parts of the Far East. Most commercial capers are pickled and preserved in a vinegar brine. One popular caper of this sort is the small "nonpareil" caper from France. Another highly prized caper is produced in Pantelleria, a volcanic Italian island between Sicily and Africa. Connoisseurs say the volcanic soil is what gives the island's capers their intense flavor. These capers, harvested from May to August, are packed in sea salt and then marinated in its own brine. After a few weeks, they are drained and packed in more sea salt and released for sale.
As with other plants, the flower eventually morphs into a green berry the size of a small olive. Caperberries are cured the same way as most commercial capers, but they are milder in flavor than the bud. You can find them at the market with their stems still attached, sealed in jars.
One outstanding and deceptively easy way to use capers is to fry them in butter until the butter turns brown and the capers become crisp. The capers and butter can be used as a quick and delicious sauce over a sauteed fillet of sole or other mild fish.
The caperberry can also be used as a replacement for an olive in a martini.
